Creamy Cauliflower and Cheese Soup

Cauliflower and cheese soup can be taken as a side dish with your meal or it can also be consume as a breakfast along with a toast. Rich and creamy texture of this soup will be pretty much loved by everyone.


Butter: 3 tsp
All purpose flour: 2 tbsp
Milk: 1 cup
Heavy cream: 1 cup
Cauliflower: 12 florets
Carrot: 1 (finely chopped)
White onion: 1 (small and finely chopped)
Chicken broth or vegetable broth: 1 cup
Cheddar Cheese or Swiss Cheese: 2 tbsp
Oregano: 1/2 tsp
Parmesan cheese (optional): 1/2 tsp
Salt: to taste
Black pepper: 1 tsp


1) Add 1 tsp butter in a heavy bottom pot, add onions and fry till golden. Remove onions and keep it aside.
2) Add remaining butter to the pot and add all purpose flour, saute it with butter until raw smell is gone. Then add milk and heavy cream to this and make it into a smooth paste without any lumps. Make sure for instructions in this step flame is very low.
3) Add chicken broth or vegetable broth to this mixture and let it boil. Then add cauliflower florets and finely chopped carrots and let it cook for sometime.
4) Once cauliflower and carrots are soft, add cheese, salt , black pepper, oregano and parmesan cheese.
5) Cook for two more minutes until cheese is melted and dissolved into a smooth paste and then serve it hot as a starter or with a toast.
