Spinach paneer (Palak paneer)

Spinach paneer is a classic Indian vegetarian dish with cubed cheese dipped in spinach puree. Its a must try for all paneer lovers.




Ingredients:

Spinach: 1 bunch
Onions: 2 (medium)
Tomatoes: 3
Green chillies: 2
Paneer: 250 gms (cubed)
Canola Oil: 4 tbsp
Red chilly powder: 1 tsp
Ginger- Garlic paste: 1 tbsp
Turmeric: 1/2 tsp
Cumin powder: 2 tsp
Salt: to taste

Method:

1. Clean Spinach well first with cold water and then by dipping in hot boiling water and drain it immediately.
2. Blend Spinach with tomatoes and green chillies in to a fine paste and keep it aside.
3. In a heavy bottomed vessel, pour some oil and fry finely chopped onions until translucent. Then add ginger garlic paste, red chilly powder, turmeric, salt and saute for sometime.
4. Then pour spinach tomato puree and cover the vessel. Let it cook until the gravy thickens and oil oozes out.
5. In a separate skillet, add some oil and fry 1 inch cubes of paneer until it is lightly browned towards the ends.
6. Add fried paneer to the thicken spinach gravy and add cumin powder. Let it cook for 5 minutes and then serve hot with plain rice.
